Hey Knife! Nice to see you here! If you have a look around, you can find a handful of British theme parks.
There are also several other theme parks on this wiki that are in Europe. Just check out this page.
I guess the answer to your question would be that nobody has gotten around to starting those pages.

Hey Knife! While you are creating pages, may you please use the pre-made templates? They can be found by clicking on the "Create a Page!" menu at the top next to the site's logo. Water Rides
Hi Knife! I'm excited that you've returned! It's nice to know not everyone involved with all that AOW drama quit... :P At any rate, I'll answer your question.
We actually have a sister wiki for water rides (admittedly, it hasn't really taken off yet). It can be found here. I looked up the water ride, River Quest, and it does look like it classifies as a water ride. As far as I can tell, it's not set on a track and doesn't go uphill, aside from lift hills.
